Pork Tenderloin:
Ingredients:
- Pork Tenderloin (one 3 oz piece per serving)
- Olive Oil (about a Tbsp or less)
- Salt (to taste)
- Pepper (to taste)
Heat the olive oil in a skillet. While it is heating salt and pepper both sides of the tenderloin, add to the pan. Cook for about 5 minutes (depending on the thickness), flip, and cook on the other side until it is done. Sometimes the food needs to "speak for itself" without much help.
Mashed Sweet Potatoes:
This makes 2 servings (my boys don't eat these, I don't think they belong to me)
Ingredients:
- Sweet Potatoes (one per two people is normally enough)
- 1 Tbsp of Butter
- Cinnamon (to taste)
- 1/8 cup Brown Sugar
- 2 Tbsp of Milk (this is an estimate, remember, I'm from the south, we don't always measure everything)
Peel, slice, and cook sweet potatoes until fork tender. Drain and mash them. Add the rest of the ingredients, mix well.
Cinnamon Apples:
This makes 4 servings (my boys love these!)
Ingredients:
- 3 Large Apples (I use Granny Smith, but any kind should work)
- Cinnamon to taste
- 1/4 cup Brown Sugar (or less depending on your taste--again, this is just an estimate)
- 1/8 cup Splenda (you can use sugar, but it will up your calorie count--again, this is just an estimate)
- 1 Tbsp Butter
Melt the butter in a sauce pan. Add the apples with the rest of the ingredients, cook on med heat until apples are soft and the "juice" is thickened.
